Gluten-Free Peanut Butter, Banana, and Chocolate Brownie Ugly Mug Cake---
Sometimes I have a sweet tooth that only chocolate will satisfy.
I go to the kitchen, open the refrigerator door, close the door (nothing), open the refrigerator door hoping something has miraculously appeared in there......and of course, this happens around 10ish at night. Tonight, I put together the yummiest combination ever........ Peanut Butter, Banana, and Chocolate!
One Caveat: I call this Ugly Mug Cake because it is frankly,,,not pretty. However, that being said some of the most delicious desserts are not beautiful!
INGREDIENTS: (This is enough for 2 mugs, the kids eat mine if I don't make an extra)
- 1/2 cup Gluten Free All Purpose Baking Mix (We like King Arthur)
- 1/2 cup sugar
- 1/2 cup milk
- 2 tbsp cocoa powder, unsweetened
- pinch of salt
- 2 tbsp butter, melted
- 2 tbsp peanut butter (Jiffy Natural specifies gluten free on jar)
- 2 tsp gluten free vanilla
- 1 ripe banana, mashed
- 2 tbsp butter, melted
- 1 egg
INSTRUCTIONS:
- In a small mixing bowl combine the flour, sugar, salt and cocoa and mix until it is only one color.
- Add the milk, egg, butter, vanilla, banana, and peanut butter and stir until smooth (of course, there will be some lumps due to the banana).
- Place the mug into the microwave and heat on high for 2 minutes, check the mug cake and if not quite done put back in microwave for 10 seconds at a time...2 minutes was perfect for a 1000 watt microwave.
- Viola! Ugly Mug Cake!
