Gluten-Free Onion Rings

Gluten-Free Onion Rings---

Nothing is as satisfying as crispy, fried onion rings. It is one of my favorite "bad for me" foods. That being said, no one else in my home loves them, so they usually are not one of the gluten-free foods that I make----- and it is virtually impossible to find them in a restaurant.  

Tonight, the hankering for this fried delicacy was overwhelming (maybe it was someone in the car ordering gluten-filled onion rings at the drive-through), but I had to have them. 

 Let's make some onion rings!

INGREDIENTS:

  • 2 large Vidalia onions
  • 2 tsp. Sea Salt
  • 2 tsp. pepper
  • 4 eggs
  • 1 1/2 cups milk
  • 1 cup gluten-free bread crumbs (we used 4C Gluten-Free bread crumbs)
  • 1 cup gluten-free flour
  • 1 cup yellow corn meal
  • Oil for frying

DIRECTIONS:

  • Pour oil into frying pan (just enough to cover the onion rings), heat oil to medium/high.
  • Cut ends off onions and peel. Slice into 1/2 inch thick slices. Separate the rings.

 

  • In  two small bowls: 1) combine the milk and eggs, whisk thoroughly 2) mix together the breadcrumbs, corn meal, flour, salt ,and pepper.

 

  • 1) Dredge onion into the egg/ milk mixture. 2)Then into the flour mixture.  3) Again into the egg/milk mixture. 4) Finally, into the flour mixture.

  • Drop into medium/high oil, fry until brown on one side (about 2 minutes), then flip over and brown on the other side until golden brown.

  • Take rings out of the oil, and place on plate with paper towel. Sprinkle with a little salt.

VOILA!

We have gluten-free onion rings!
