Gluten-Free, Vegan Skillet Apple Pie---
Apple pie baked in a cast iron skillet is amazing, add to that gluten-free and vegan, and it is Pie Nirvana.
Let's make some gluten-free, vegan apple pie!
INGREDIENTS
Filling:
- 2 (9 in.) gf pie shells--we used Wholly Wholesome Gluten-Free Pie shells (these are also Vegan)
- 3 cups sugar
- 2 tsp. cinnamon
- 2 tsp. nutmeg
- 10 cups tart apples, peeled and thinly sliced
- 1/4 cup gluten-free all purpose flour
- dash salt
- 4 tbsp. Earth Balance
Topping:
- 2 tbsp. almond milk
- sugar to sprinkle on top
DIRECTIONS:
- In a large mixing bowl, add sliced apples. Coat with the sugar, cinnamon, and nutmeg. Toss well. Cover and let stand for 1 hour. This allows the juices from the apples to be released into a syrup.
- Drain the syrup, place in a small saucepan. Bring to boil and reduce heat. Simmer until mixture slightly thickens, about 15 minutes. Remove. Let cool completely.
- Preheat oven to 350 degrees F.
- Add flour and salt to drained apples. Mix well.
- Spray skillet with non-stick spray. Place the first pie shell on the bottom. Add apples. Pour syrup over apples. Add dollops of Earth Balance.
- Place remaining pie shell over the apples. Cut slits in the top (I break the pie shell, and add another because I love the crust.) Brush almond milk over the pastry. Sprinkle with sugar.
- Place on a baking sheet. Bake for 50 minutes. Cool and serve.
